We’ve had great results through our 4 week cooking classes where each student prepared a pot of soup in their own kitchens while we worked together virtually.
Together we made Pesto Minestrone, Lentil, Tuscan Bean and on our last day we prepared Apple Sweet Potato Soup. All are perfect for chilly Autumn days and can be made in quantities that suit your family.
Autumn soup should have the colors of Autumn it it - oranges and yellows like squashes, carrots and pumpkins, white like garlic, onion and cauliflower, and red/purple like eggplant and apple.
One of the objectives of the class was to overcome the feeling that cooking is a chore. Participants organized their ingredients ahead of time, learned to improvise and switch up ingredients creatively and share their results with the others in the class.
