Do you like soup? For whatever reason, the idea of making your own soup has been daunting for many people. I like to make soup for several reasons: I know what's in it; I can season it the way I like it; you get several servings of it, either as a light lunch or a bowl before dinner; it's a great way to use up vegetable scraps.
Through Sustainable Medfield and Medfield TV I was able to present a program on making Pesto Minestrone Soup along with real chef Andrew Wilkinson and my granddaughter and kitchen assistant Emie Doyle. This recipe has multiple ingredients in it but it's fun to make.
For most soups I start with the basics: olive oil, diced onion, minced garlic and broth, and go from there. You can go middle east with cumin and cardamom, Asian with ginger, Italian with oregano and basil. It's fun to keep mixing up the flavors.
