Cabbage contains insoluble fiber that can move your digestive system along, and apple cider vinegar is a medicinal food highly beneficial for digestion. You'll be giving yourself some nice digestive flora with this dish and balance your blood sugar (a good idea after those holiday desserts).
Ingredients
• half a head of red cabbage, shredded
• ¼ red onion, sliced
• 1⁄4 to 1⁄2 cup apple cider vinegar (enough to cover cabbage)
• 1 apple, diced
• ½ cup chopped walnuts
• fresh herbs or chopped greens of choice: arugula, parsley, baby spinach
• freshly ground black pepper
1 Place shredded cabbage and red onion in a large bowl and cover with apple cider vinegar. Soak for at least 30 minutes.
2 Before serving, toss cabbage and onion mixture with diced apple, walnuts, and greens. Season with salt and pepper to taste
