Apple Salad with Gorgonzola Cheese

You can make this salad in a jiffy when you use prewashed greens.  It's colorful, nourishing and delicious.

1 bag (10 oz) of mixed greens

2 thin sliced or diced organic apples, skins on

1/2 cup chopped walnuts or almonds

4 oz. grated or diced gorgonzola cheese

Dressing:

1 clove garlic, crushed                       2 oz  red wine vinegar

4. oz. extra virgin olive oil                 1 T. pure maple syrup

juice of 1/2 lemon
