Ingredients
3 cups washed arugula
1 can rinsed and drained cannelloni beans
1/2 thinly sliced red onion
1/2 cup chopped walnuts
Dressing
1/4 cup extra virgin olive oil
1/8 cup red wine vinegar
1 T. dijon mustard
salt and ground pepper to taste
blend salad ingredients together. In a separate bowl, whisk the dijon into the red wine vinegar. Slowly add the olive oil. Blend into the salad and finish with salt and pepper to taste. Be creative and add some herbs from your garden to broaden the flavors.
