With tomatoes in full season, a cappers salad is a beautiful way to display them - and then to eat them!
Here's a simple way to prepare a beautiful platter:
wash and dry a mix of 6 heirloom tomatoes of varying shades; slice in 1/4" thickness
spread across a large oval platter, blending the tones
place 3-4 rounded chunks of mozzarella cheese on one end of the platter
intersperse thinly sliced radishes, olives and cucumbers around the platter
garnish with basil and flat parsley leaves
generously sprinkle high quality extra virgin olive oil across the platter
add salt and pepper to taste
