Sharon and I started to work together during the pandemic. She’s close to turning 50 and has big plans to enroll in nursing school. But she was concerned about her low energy and extra weight and worried she wouldn’t be able to keep up with the work. I gave her what I give everyone - specific foods to stock your pantry and refrigerator with that make it easy to put together nutritious meals in 20 minutes or less. That’s what we all need in our busy lives. Well, several months later and 29.5 pounds lighter, Sharon shared these nuggets:
Butternut squash….yum! Roasted eggplant? Who knew it was any good outside of parm! Macintosh apples, broccoli, spinach…grapes, bananas, lettuce wraps instead of bread….Stuffed peppers with ground turkey and Italian seasoning.
I am eating probably 90% clean. I have to have my regular coffee and a little chocolate.
When you have the proper support, motivation and accountability it becomes pretty easy to take good care of yourself. Why? Because you feel better!
Sharon’s attitude became more positive and upbeat and her vision of attending nursing school successfully as a 50 year old became much more possible.
