A watermelon salad is the perfect solution for hydrating on a hot summer day.
Main ingredients:
6-8 pound watermelon
4-8 ounce feta cheese, crumbled
1/2 cup chopped mint or fresh basil
Cut up a 6-8 pound seedless watermelon into bite size chunks. Chop 4-8 oz, of feta cheese and add both to the bowl, gently tossing to combine flavors. Add 1/2 cup chopped mint or fresh basil and serve.
Combine in a large serving bowl:
1/3 cup extra virgin olive oil
3 Tbsp. fresh lime or lemon juice
pinch of salt and ground pepper
